Avocado and White Bean Salad with Vinaigrette
1 can white beans
1 avocado, peeled and chopped
1 roma tomato, chopped
1/4 cup sweet onion chopped finely
Vinaigrette:
1 1/2 Tblsp olive oil
1/4 cup lemon juice
1 Tblsp fresh basil, chopped
1 clove garlic, finely chopped
salt and pepper to taste
1 tsp mustard
Whisk vinaigrette ingredients together then pour over salad base and mix well. Refrigerate for a few hours before serving. EnJOY!
