Moroccan Rice with Honey Lime Sweet Potatoes

Moroccan Rice and Honey-Lime
Sweet Potatoes

1.5 lb ground beef (I use ground turkey)
Rice pilaf (Rice-A-Roni®)
½ c onion, chopped
2 cups water
(2 t minced garlic, 2 T oil)
(1 t ground cumin, ¼ t cinnamon)
1 can chick peas or gorbanzo beans, drained
16 oz broccoli, thawed
2 -1.5 oz snack boxes of raisins, optional
1 small bag almonds, toasted
¼ c cilantro, optional

In large saucepan or soup pot, brown beef; drain on paper
towel. Set aside. In skillet with oil, sauté onion, rice, and garlic.
Slowly stir in 2 c water, cumin, cinnamon and Rice-A-Roni
seasoning. Bring to boil; reduce heat and simmer 10 min. Stir
in chick peas, broccoli, beef and raisins. Cover. Simmer 10
more min. Top with almonds and cilantro.

Combine sweet potatoes and olive oil. Spread on baking
sheet. Bake @350o for 20 min. Combine honey and lime
juice. Pour over potatoes; gently toss. Bake 20 more min.
Serve warm.
3 sweet potatoes, peeled & cubed
(2 T olive oil, 3 T honey)
2 T lime juice or juice of 2 limes
