Horchata and Mexican Street Corn
For Cinco De Mayo this year my kids had requests! Shrimp tacos, horchata and mexican corn. I found the horchata recipe on yummyhealthyeasy.com and the corn on sassygirlz.net
So yummy!
Horchata
1-2/3 cups uncooked white long grain rice
5 cups water
2 cinnamon sticks
1/2 cup white sugar
3 cups milk
2 tsp vanilla extract
Pour the rice and 2 cups water in a blender. Blend until the rice begins to break up, about 1 minute. Add the last 3 cups of water and blend for an additional 30 seconds. Let the rice and water sit on the counter for anywhere from 3+ hours.
Strain the rice water into a large pitcher and throw away the rice. Stir the cinnamon sticks, sugar, milk and vanilla into the rice water. Chill. When thoroughly chilled, stir up and pour over ice. Add an extra sprinkle or two of cinnamon if needed. EnJOY!
Mexican Street Corn
4 ears of corn
1 cup sour cream
1/2 cup mayo
1 cup grated parmesan cheese (I would use queso fresco crumbled instead)
1/4 cup cilantro (fresh, rough chop)
1 lime (cut, ready to squeeze)
chili powder (to taste)
salt and pepper (to taste)
Preheat grill. When grill is hot place your already shucked corn on the grill, make sure to leave the core on so you have something to grab it with while eating. In a medium bowl, mix mayo, sour cream and chopped cilantro together. Let the corn get slightly charred on the grill, turn a time or two so it's cooked evenly. Remove from grill and while still hot, smother completely with mayo mixture. Sprinkle chili powder and salt and pepper on corn. Squeeze lime juice on top and sprinkle with cheese. EnJOY!

I was searching for a fun new years eve drink to toast with the fam and came across something Ive always wanted to try, Italian sodas! I found this on www.butterwithasideofbread.com
The hardest part of this recipe was finding the Rasberry syrup! I searched 4 different stores. I finally found it a Bevmo, luckys and safeways carry the vanilla syrup and I think walmart and costplus also carry both types of syrup. You can alter the recipe as well, if it is too sweet add less syrup.

Virgin Mango Mojitos
I was inspired for these bad boys while on a trip to New York last weekend to see an amazing friend be married to her amazing hubby. I may not drink alcohol but this girl still loves a fun drink. I ordered one of these in New York and it was amazing! So I found out what was in it and made it myself so I could share with you.
Virgin Mango Mojitos
4 mint leaves
1/2 lime plus a wedge
1 Tblsp mango puree
1 Tblsp sugar
1 cup 7-up or sprite
This makes one drink. Put your mint leaves in your serving glass and using a wooden spoon, stir then about and chop them a bit to get the oils out. Once you start smelling them youve done your job. Then squeeze the juice from 1/2 a lime or a whole lime if you like it more limey. Add your wedge of lime, unsqueezed. Add mango puree, sugar and soda and give it a stir. Add some ice and drink up! EnJOY!

Virgin Mango Margaritas
Tonights menu is all thanks to pioneerwoman.com, she is my hero. I had some making up to do with my family so for an extra special addition to dinner, I made these virgin mango margaritas. So good! I just love fun drinks like this!
Virgin Mango Margaritas
2 large whole Limes
2 Tablespoons Coarse Sugar (decorator's Sugar)
2 jars (20 Ounce) Mango Chunks, Drained (or 2 large fresh mangos, rouphly chopped)
1 cup sprite/ or 7-up (I used 1 1/2 cups)
¼ cups Sugar
Zest the limes and lay the zest on a plate. If you have the time, let the zest dry out for ten minutes or so. Pour the coarse sugar over the zest and toss it around with your fingers to combine. Lime sugar! Yum.
Throw the mango chunks into a blender. Pour in the soda and sugar. Squeeze in the juice of the limes, then top off the whole thing with ice. Blend it until it’s totally smooth. Give it a taste, then add more of what you think it needs (soda, sugar, lime, etc.)
To serve, cut a small wedge in one of the juiced limes and rub the lime all over the rim of the glass to moisten. Dip the rim of the glasses in the lime sugar to give it a pretty, crystally rim.
Pour in the margaritas and serve immediately! EnJOY!

Orange Julius
This is one of my favorite smoothy type drinks ever. My parents use to make this when I was a kid and I have fond memories everytime I taste it again. I found this original recipe from Tasteof home.com. Oh and the reason mine looks pink is because I added some rasberries to it.
Orange Julius
1 can (6 ounces) frozen orange juice concentrate, thawed
1 cup milk
1 cup water
1/4 cup sugar
1 teaspoon vanilla extract
10 to 12 ice cubes
In a blender, combine the orange juice, milk, water, sugar and vanilla. Cover and blend until smooth. With blender running, add ice cubes, one at a time, through the opening in lid. Blend until smooth. Serve immediately. Makes 4-5 servings. EnJOY!

Brazilian Lemonade
Thank you Nicole Page for sharing this most amazing drink from ourbestbites.com
Who needs alcohol to enjoy a perfect drink eh?! So good!
Brazilian Lemonade
4 juicy limes (try and find ones with thin, smooth skins; they’re the juiciest and the thin skin cuts down on the chance of your drink being bitter)
1 cup sugar
6 cup cold water
6-7 Tbsp. sweetened condensed milk
Mix cold water and sugar very well and chill until ready to use. This step can be done ahead of time.
Wash limes thoroughly with soap (I just use hand-dish washing soap or regular hand soap); you need the soap to get the wax and pesticides off of the limes because you’re using the WHOLE lime, baby. Cut the ends off the limes and then cut each lime into 8ths.
Place 1/2 of the limes in your blender.
Add 1/2 of the sugar water, place the lid on your blender, and pulse 5 times. Place a fine-mesh strainer over a pitcher (the one you’ll serve the lemonade in) and pour the blended mixture through the strainer and into the pitcher. Use a spoon to press the rest of the liquid into the pitcher. Dump the pulp and stuff in the strainer into the trash. Repeat with remaining limes and sugar water. Add sweetened condensed milk; DO NOT leave this step out unless you will die of a horrible sweetened condensed milk allergy because this is the secret ingredient! You may want to taste test it at this point; I used giant, thick-skinned limes tonight and didn’t test it and it came out a little bitter. If it’s bitter, just add some more sugar and maybe a little more milk.
Serve immediately over lots of ice. This does not keep well, so don’t make this in advance (although you can cut the limes, mix the sugar water, and measure the sweetened condensed milk in advance). Serves 4, although I can pretty much guarantee you that people will want more; I usually plan on 1 1/2 servings at LEAST per person.
EnJOY!
