Crock-Pot Mozzarella Stuffed Meatballs
Oh yes, this one is seriously awesome! I have made so many different meatball recipes and this is by far my fav! Even if you make them without the mozzarella inside, they are insanely good! The kid is mixing the hot sausage with the ground beef! It gives it so much flavor. Thanks to my father in law for sharing another fabulous recipe from Tasty.
Crock-Pot Mozzarella Stuffed Meatballs

2 tsp salt
1 tsp black pepper
1 cup bread crumbs
1/4 cup parmesan cheese grated
2 eggs
1/2 cup whole milk
1/2 cup chopped parsley
2 jars marina
Pour 1 cup marinara on bottom of crock-pot. Mix beef, sausage, garlic, salt, pepper, bread crumbs, parmesan cheese, eggs, milk and parsley together in a large bowl. Take a chunk of the meat mixture and roll it in a ball, stuff a piece of mozzarella in the middle of the meatball and seel, drop on top of the marinara in crock-pot. Continue to roll out meatballs and stuffing with cheese, put into crock-pot. Cover with marinara sauce and cook on high for 3 hours or cooked. Serve over pasta and EnJOY!

I love a good soup recipe! This is a Forks Over Knives recipe and I will definitely add this to our regular menu. So easy and so good! Not to mention so healthy! You can leave out and add in anything you have on hand like I did. I left out the caraway seeds and potatoes and added kale.

Slow Cooker Buffalo Chicken Meatballs
I love anything "buffalo-ed" so I couldn't wait to make these. They are not super spicey so don't be afraid to add all of that yummy buffalo sauce! Thanks damndelicious.net for this recipe. They are a healthier version of regular meatballs, or buffalo chicken wings.

Slow Cooked Hoisin Pork Wraps with Peanut Slaw and Homemade Hoisin Sauce
Thank you thank you Molly Delmonte for sharing this amazing recipe! This is seriously one of my all time fav recipes! The slaw definatly topped it off and would not make it without it. I made my own tortilla recipe, you can type in tortilla on my blog and it will bring up the recipe. I also made my own hoisin sauce, it is too easy not too and so much tastier than a bottled jar. This recipe makes a lot so you could certainly cut the recipe in half if you dont have a large crowd like I did when I made this.
Slow Cooked Hoisin Pork Wraps
6 lbs pork butt, trimmed of thick fat
salt and pepper
6 cloves garlic, peeled and smashed (I roughly chopped mine)
1 large piece of fresh ginger, about 5 inches long
1 bottle of hoisin sauce (12-15 oz) or make your own, see recipe below*
Rub the trimmed pork shoulder/butt all over with salt and fresh cracked black pepper. Put in the slow cooker. Add smashed/chopped garlic, tucking them around the pork. Peel and grate the ginger and put in too. Pour the hoisin sauce over everything. Cover and cook on low for about 10 hours.
When finished and tender, use two large forks to shred the meat and mix it with the sauce.
To serve:
Place the hoisin soaked meat onto a warmed tortilla and top with peanut slaw. EnJOY!
Crunchy Peanut Slaw:
1 medium head of green cabbage, out leaves and core removed
1 1/2 cups roasted, unsalted peanuts (I roughly chopped mine)
1 bunch green onions
1 cup chopped cilantro
salt and pepper
Dressing:
1/2 cup light oil, like canola (I used a little less)
3 Tblsp rice vinegar
1 Tblsp sugar
1 Tblsp sesame oil
1 tsp soy ssauce
Shred cabbage very finely. The fineness of the shredded cabbage is really what makes this salad. You want it in thin threads and bite size lengths. Toss with the peanuts in a large bowl. Chop the green onion and cilantro and toss into slaw.
Whisk the dressing until emulsified, then taaste and edjust to your own preferences of sweetness and saltiness. Toss in with the cabbage.
Homemade Hoisin Sauce
(I doubled this sauce recipe for my hoisin meat)
4 Tblsp soy sauce
2 Tblsp peanut butter or black bean paste (I used peanut butter)
1 Tblsp honey
2 tsp rice vinegar
1/8 tsp garlic powder
2 tsp sesame oil
10 drops suracha sauce or a chinese hot sauce (recipe called for 20 drops but I used less)
1/8 tsp black pepper
Mix all ingredients together and whisk for a minute or two until the peanut butter mostly blends in.
French Dip Sandwiches
Oh my! Can I please eat these everynight?! This was actually my first try at making french dip sandwiches and I love this recipe! It brings back such great memories of when my mom use to make these, one of my favorite dinners. This recipe is from www.ourbestbites.com
French Dip sandwiches
1 2.5-3 lb beef roast
2 Tblsp olive oil
salt and pepper to taste
2 1oz pckges dry onion soup mix
2 cups water
2 cans beef broth (about 2 cups)
6-8 large buns (or more) (use a good crusty bread, I used ciabatta rolls)
Swiss, provolone, or mozzarella cheese, sliced
Heat oil in a large pot over medium high heat and rub roast with salt and pepper. When very hot, carefully place roast in pot and sear on all sides. Your not cooking the meat, your just browning it quickly on all sides to add flavor and seal in the juices.
Place in crockpot and sprinkle with onion soup mix. Pour water and beef broth over roast.
Cook 8-10 hours on low or until meat shreds easily. Shred the meat with a fork.
Place meat on crusty rolls. Top with cheese, put sandwiches on a cookie sheet and put in oven at 425 for 5 minutes or longer until cheese is melted and bread is nice and crusty.

White Chicken Chili
A true pinterest "nailed it" moment! I have quite a few pinterest fails lately so I was excited to find one that worked that my entire family loved. This recipe is super easy, especially if you buy your salsa verde from the store. I made mine and it was not hard at all and worth the extra effort. Also, I cheated to make it even easier by using a store bought rotisserie chickens!
White Chicken Chili
6 cups chicken broth
4 cups cooked shredded chicken (I use 2 entire store bought rotisserie chickens)
2 (15oz) cans white beans, drained
2 cups salsa verde (store bought or homemade)
2 tsp ground cumin
Optional toppings: diced avacado, chopped cilantro, shredded cheese, chopped green onions, sour cream, crumbled tortilla chips)
Add chicken broth, shredded chicken, beans, salsa and cumin to a medium saucepan, and stir to combine. Heat over medium heat until boiling, then cover and reduce heat to medium low and simmer for atleast 5 minutes.
Serve warm with desired toppings. EnJOY!
Slow cooker method;
add chicken broth, 2-3 uncooked boneless skinless chicken breasts, beans, salsa and cumin to a slow cooker, stir to combine. Cook on low for 6-8 hours, or high 3-4 hours until the chicken is cooked through and shreds easily with a fork. Shred chicken and serve warm with desired toppings.
Tomatilla Salsa Verde
2 lbs tomatillos, husks removed and rinsed
1-2 serrano peppers (or 2-3 jalapeno peppers)
4 unpeeled garlic cloves
1 cup fresh cilantro
1/2 cup diced white onion
4 tsp. lime juice
large pinch of salt
Preheat broiler to high. Place tomatillos, serrano and unpeeled garlic cloves in a baking dish and put under the preheated broiler until the tomatillos are roasted and the peppers are slightly charred on all sides, about 10-15 minutes. Rotate ingredients during cooking to make sure all sides are charred.
Remove baking dish from the oven and slightly cool. Once cooled peel the peppers and garlic and remove any extremely charred skin from the tomatillo (I leave it on because it adds flavor).
Add the tomatillos, garlic, serrano, onions, cilantro, lime juice and salt to a food processor. Pulse until the salsa is well blended.
Pork Carnitas
I got this recipe from my sister in law and I just love it! Super easy to make, and so good! I made this in my new handy-dandy pressure cooker but you can also make in the crockpot, just dont add the chicken broth. Thanks Lisa!
Pork Carnitas
2 teaspoon salt
2 teaspoon garlic powder
2 teaspoon ground cumin
1 teaspoon crumbled dried oregano
1 teaspoon ground coriander
1/2 teaspoon ground cinnamon
1 (3-4 pound ) boneless pork shoulder/rump roast
(Have your butcher remove any bones and fat as much as possible)
2 bay leaves
2 cups chicken broth
Garnishes:
Shredded Cheese
Small Tortillas
Limes
Avocado
Cilantro
Salsa Verde
Pico de Gallo
If you want this pork super tender, use your crockpot. Mix all the spices together in a small bowl and rub all over your meat. You dont need to add the chicken broth for the crockpot version of this recipe. Place seasoned meat in crockpot on low for about 8 hours until it shreds easily.
If you are using a pressure cooker: In a small bowl, mix up all the dry spice ingredients, except for theChiles and bay leaves. Rub
the roast with the mixture all over. Let it
sit for about 2-3 minutes. In
the pressure cooker’s main cooking pot, pour in the chicken stock and bay
leaves. Chop up the Serrano Chiles into small pieces and add it to the stock.
If you are using a pressure cooker: In a small bowl, mix up all the dry spice ingredients, except for the
Now,
for this recipe I actually decided to use a Trivet. It didn’t come with my
pressure cooker, but I happened to have one that fit into it nicely. You can
buy these anywhere.
I
use the trivet to set the roast on so the meat doesn’t sit directly into the
chicken stock liquid at the beginning because if it does, it has the tendency
to rinse off all the spices you just rubbed into the roast. So the trivet is
pretty handy to avoid that.
Set
the trivet into the cooking pot and place the roast on top of it. Close the lid
and turn it counter clock-wise to lock it. Turn the Pressure Valve to the
Airtight position. Press the PRESSURE COOKING TIME button for 60-minutes and
then press START. Yup, this is actually a recipe that will take more than an
hour. But in a slow-cooker, it would’ve taken 8 hours.
While
the pressure cooker is doing its thing, you can take this time to prepare the
garnishes. Chop up the cilantro, slice up the limes and avocados, etc.
Once
the 60-minute cook time has expired, turn the pressure valve to the Exhaust
position to release all the pressure and open the lid. The roast may look done
to you, but it’s not quite there yet. But the spices have cooked into the meat
and have formed a nice looking yummy soft “crust”. Using a large fork and/or
tongs, remove the pork and side aside. Then remove the trivet. Now put the pork
roast back into the pot directly into the liquid. There’s no risk of the spices
washing off now.
Close
the lid again and turn it counter clock-wise to lock it. Turn the Pressure
Valve to the Airtight position. Press the PRESSURE COOKING TIME button for
30-minutes and then press START. This extra cooking time will get the meat to
the fall-apart stage.
Once
the cooking time is complete, turn the pressure valve to the Exhaust position
to release all the pressure and open the lid. Remove the roast to a large
platter. Using a sharp knife and fork, start shredding the meat into small bite
size carnita pieces. Discard any remaining fat. The meat is so juicy and
tender, and all the spices make it smell heavenly! Put all the pieces onto a
plate and spoon some of the leftover chicken stock over the meat and season
with some salt and pepper.
Now
you can use the carnitas to make anything you want, from tamales to burritos to
whatever. I chose to make tacos. Small and light. Pile it high with all sorts
of toppings or keep it simple. EnJOY!
Smothered Pork Chops in Crockpot
I found this recipe on melskitchencafe.com. This is my families and mine new most all time favorite recipe ever! Seriously, this is a must put on the menu type recipe. You will thank me. I cannot express enough just how flippin amazing this recipe is! Run! Make it! Then thank me! PS: I skipped the blender part, I just made the gravy out off all the onions and drippings and it was just perfect! If you have to have smooth gravy then use the blender, otherwise, dont bother.
Smothered Pork Chops in Crockpot
*Note: I like to serve these smothered pork chops over rice or mashed potatoes. Let it come to a boil to ensure it thickens properly. Finally, I have doubled the pork in this recipe and kept all the other ingredients the same and there was plenty of gravy to smother the doubled pork.
*Serves 6
5 slices bacon, chopped
6 bone-in pork loin chops, about 3/4-inch thick
Salt and Pepper
2 yellow onions, peeled, halved and sliced into 1/2-inch thick half moons
1 teaspoon plus 1 tablespoon light brown sugar
1/4 cup plus 2 tablespoons cold water
3 garlic cloves, minced
1 teaspoon dried thyme
3 cups low-sodium chicken broth
1 tablespoon soy sauce
2 bay leaves
1 tablespoon cornstarch
1 tablespoon cider vinegar
2 tablespoons fresh parsley, chopped
In a large skillet over medium heat, fry bacon until lightly browned, about 5-6 minutes. Transfer bacon to a plate lined with paper towels, leaving the drippings in the pan. If you have more than 2 tablespoons drippings, drain the excess. If you don't have quite that much, supplement with canola oil. When the bacon is cool, transfer to a small bag or tupperware and refrigerate until later.
Heat the skillet with the drippings over medium or medium-high heat until rippling and hot. Meanwhile, pat pork chops dry with paper towels and sprinkle with salt and pepper. Cook pork chops until they are golden brown on each side, about 2 minutes per side, cooking them in batches in the skillet if your skillet isn't big enough to hold all six at a time in a single layer. When golden on each side, transfer the chops to the slow cooker and repeat with remaining pork.
Pour off all but 1 teaspoon of fat from the skillet; add onions, 1 teaspoon brown sugar, 1/4 teaspoon salt and 1/4 cup water to empty skillet. Using a wooden spoon, scrape browned bits from bottom of the pan and cook over medium-high heat until onions are soft, about 4-6 minutes. Stir in garlic and thyme and cook until fragrant, about 30 seconds. Pour onion mixture over chops in the slow cooker. Add broth, soy sauce and remaining 1 tablespoon brown sugar to skillet, bring to a boil and add bay leaves. Pour mixture over onions in slow cooker.
Cover slow cooker and cook on low until pork is tender, about 8 hours (or cook on high for 4 hours).
When ready to serve, carefully transfer chops to serving platter with a large spoon and tent with foil. Discard bay leaves and pour liquid through a mesh strainer into a saucepan, reserving the solids. Transfer solids to a food processor or blender with 1 cup liquid and blend until smooth. Stir the blended mixture back into remaining liquid in the saucepan. In a small bowl, mix cornstarch and remaining 2 tablespoons water together in a small bowl and stir into sauce. Cook over medium heat until thickened and bubbly, about 5 minutes. Stir in vinegar, season with salt and pepper, pour over chops and sprinkle with reserved bacon and parsley. Serve. EnJOY!

Serve. EnJOY!
Crockpot Chicken Curry
This is a recipe from Martha stewart. I added a couple of ingredients to it. Super easy to make and so full of flavor.
Crockpot Chicken Curry
3 pounds boneless, skinless chicken thighs, trimmed
2 medium onions, halved and thinly sliced
2-3 large carrots, peeled and sliced (large)
2-3 small yukon potatoes, peeled and cubed
8 garlic cloves, thinly sliced
16 thin slices peeled fresh ginger (about 1 ounce)
2 tablespoons curry powder, preferably Madras
1 teaspoon ground coriander
1 teaspoon ground cumin
Coarse salt
2 packages frozen green peas (10 ounces each)
2-4 cups unsweetened coconut milk (depending on how creamy you want it. I used 4, or 2 cans)
1/2 cup toasted cashews (optional, for serving)
1/4 cup cilantro leaves (optional, for serving)
In a 5-quart slow cooker, toss chicken, onion, potato, carrot, garlic, ginger, curry powder, coriander, and cumin to coat. Season with 2 teaspoons salt. Cover, cook on high setting until chicken is fork-tender, about 4 hours (do not uncover while cooking).
Stir in coconut milk and peas; cover, cook until peas are heated through, about 30-40 minutes, turning to high heat.
Transfer chicken to a large bowl; shred with fork. Return to pot; toss with sauce.
To serve, garnish with 1/2 cup toasted cashews and 1/4 cup fresh cilantro leaves, if desired. EnJOY!

Glaze:
1/2 cup brown sugar, light or dark
