Moccu Chicken and Rice and Peas


Moccu Chicken
This is my all time fav chicken marinade given to us by the Lopaca and Mandy Lawther, hope we got it right!
Marinade:
1 c soy sauce
1 c white sugar
1 Tblsp minced garlic

Marinate chicken overnight or atleast a few hours until chicken turns dark in color.
Grill to an internal temp of 165, usually 8min on each side. Pretty easy huh?


Jamaican Rice and Peas
Recipe by bobbie flay. It says peas but its actually beans, usually kidney beans but I use black beans. I also used canned beans and skipped the overnight soak part! Way easier with canned, just rinse them off and add them to your coconut milk and seasoning. I didnt have peppers so I added Cayene pepper powder to give a little kick. Just add about 1-2cups extra water if you use canned beans.
Ingredients
1 1/2 cups dried red kidney beans, soaked overnight and drained
2 cloves garlic, smashed
1/2 cup unsweetened coconut milk
3 green onions, thinly sliced, plus more for garnish
1 Scotch bonnet pepper, chopped
3 sprigs fresh thyme
1 1/2 cups long grain rice
Salt and freshly ground pepper

Place beans and garlic in a medium saucepan and cover with cold water. Bring to a simmer and cook until the beans are tender, about 1 to 1 1/2 hours. When the beans are tender, stir in the coconut milk, green onions, Scotch bonnet, and thyme, and increase the heat to a boil. Stir in the rice, turn heat to low simmer, cover the pot, and cook until the rice is tender and has absorbed most of the liquid. Transfer to a large serving bowl and garnish with sliced green onions.
