Ilene's Zuchini Bread

My mother in law recently brought me a loaf of this bread and I begged for the recipe! You will love this one! The perfect zuchini bread!
Zucchini Bread
3 eggs well beaten
2 cups sugar
1 cup oil (not olive oil)
1 tbls vanilla
Mix the above together until blended.

Add 2 cups grated, unpeeled zucchini

Mix well.

3 cups flour (I used 1 cup whole wheat and 2 cups white)
1 tsp soda
½ tsp baking powder
1 tsp salt
3 tsp cinnamon
½ cup nuts if desired

Mix with the wet ingredients until moistened then equally divide into two large or 4 small loaf pans that have been greased and floured (I use Pam). Bake in a 350 degree oven for 50 – 60 minutes or until done. Test with a toothpick. Can be wrapped and frozen for future use. Great for gifts
