Coconut Crunch Cookie Mix and Cookies


I had so much fun making these cookie jars and I of course had to make the cookies as well to make sure they were awesome! I found that I couldnt fit the oats into my cookie jar so I just added it to the ingredients needed list. So dont panik if you cant fit everything into your jar. Have fun dressing it up! I used a fun paper for my instructions and folded it in half, then tied it with a bow. My sister in law made these adorable little labels for me to add! I love it!

Coconut Crunch Cookie Mix and Cookies
½ cup granulated sugar
½ cup chopped pecans or hazelnuts
1 ¼ cup flaked coconut
1 cup crushed cornflakes
¾ cup packed brown sugar
½ cup oats
1 ¼ cup flour
1 tsp baking soda
1 tsp baking powder
¼ tsp salt

For jar mixture: In a quart jar, layer granulated sugar, nuts, coconut, crushed cornflakes, brown sugar, and oats. Be sure to pack with your hands firmly pressing down after each ingredient if needed. In a bowl, combine flour, baking soda, baking powder and salt. Add flour mixture to jar. Tap jar on counter to pack flour in if it gets too full. Fasten lid. Include instructions for making cookies. Makes 1 jar (enough for 36 cookies).

To make cookies: Preheat oven to 350. In a mixing bowl, stir together the contents of the jar. Add ½ cup melted butter, 1 lightly bean egg, and 1 tsp vanilla extract. Mix until combined. Shape dough into 1 inch balls and place 2 inches apart onto an ungreased cookie sheet. Bake for 8-10 minutes or until edges or lightly browned. Cool 2 minutes.

Toffee Blondies in a Jar
1 cup packed brown sugar
½ cup miniature semisweet chocolate chips
1 cup flour
1 tsp baking powder
¼ tsp salt
¾ cup coarsely chopped pecans or walnuts
½ cup toffee pieces or butterscotch flavor pieces

To make cookie jar: In a quart jar, layer brown sugar, chocolate pieces, flour, baking powder, salt, nuts and toffee pieces. Fasten lid. Include instructions for making bars. Makes 1 jar (enough for 16 bars).

To make blondies: Preheat oven to 350. Grease an 8x8inch baking dish. In a bowl, combine ¼ cup melted butter, 2 slightly beaten eggs and 1 tsp vanilla extract. Stir in contents of the jar. Spread batter into prepared pan. Bake for 25-30 minutes or until set and golden brown and edges just begin to pull away from pan. Cool in pan on wire rack. Cut into bars.
