Chocolate Marshmallow Cookies





Thank you Terrie Richardson for this recipe! Yum! How can you go wrong with chocolate and marshmallows! There is a few variations to this one so have fun and make it to your own liking!

Chocolate Marshmallow Cookies
Cake Mix cookies:
1 box devils food cake mix
2 eggs
1/2 cup oil

Mix and roll into balls.
Bake at 350 for 8-9 minutes or until just set.
Put a large marshmallow on top of each cookie, or you can cut marshmallow in half and put both halves onto cookie like I did. Bake 1 or 2 minutes longer. Cool and frost with chocolate frosting.

I made my own chocolate frosting for my cookies:

1 cup semisweet chocolate chips (6 oz)
1/3 cup whipping cream
1 teaspoon butter or margarine
1 teaspoon vanilla
1/2 cup powdered sugar

While cookies are cooling with marshmellow baked on top, in a 1-quart nonstick saucepan, melt chocolate chips over low heat, stirring until smooth. Remove from heat. Add whipping cream, butter and vanilla; blend well. Stir in powdered sugar until smooth.
Spread frosting over each cooled cookie, covering marshmallow. Let stand until frosting is set.

***You can also use chocolate chip cookies as a base instead of the cake mix cookies if you like a thicker base. I think I will try that one next time for the ultimate cookie!
