Peanut Butter Cookie Pops



This recipe is from one of the worlds best cooks/bakers, Ruth May! I was a little lazy tonight so I just made the cookie version without the sticks but still just as ooey gooey delish! How do you make a peanut butter cookie even tastier? Just put a snickers in the middle!
Peanut Butter Cookie Pops
½ cup sugar
½ cup brown sugar, firmly packed
½ cup butter, softened
½ cup peanut butter
1 tsp. vanilla extract
1 egg
1 ½ cup flour
½ tsp baking powder
½ tsp baking soda
¼ tsp salt
10 wooden craft sticks (popsicle stick size)
10 snickers fun size candy bars (or 20 mini snickers)

Heat oven to 375. In large bowl, combine sugars, butter, peanut butter, vanilla and egg. Beat well with electric mixer. Add flour, baking pwder, baking soda and salt. Mix well. Securely insert a wooden stick into small end of each candy forming a lollipop. Shape about 1/3 cup dough smoothly around each candy bar making sure bar is completely covered. Place 4 inches apart on ungreased cookie sheet. Bake for 13-16 minutes or until golden brown. Cool 10 minutes. Remove from cookie sheet. Cool completely. Makes 10 cookie pops. You can make smaller cookies by using mini snickers or snack size snickers and 1/8 cup dough for each cookie.
And of course...how do you make this even more delish? Drizzle some melted chocolate chips on top!
