Braised Chicken Thighs with Tomatoes and Green Olives


This is a weight watchers recipe I wanted to try since it was so different from what we normally have for dinner. If your not a fan of green olives, like my husband, this maybe not the one for you. It is very easy to make and very flavorful. I loved having big chunks of garlic in it! Yum! This was only 6 points plus per serving which is 1 chicken thigh with 1/2 cup sauce.
Braised Chicken Thighs with Tomatoes and Green Olives
4 (1/4 lb) skinless, bonless chicken thighs
2/3 cup reduced sodium chicken broth
3 plum tomatoes, chopped
1 onion, thinly sliced
1/3 cup halved pitted green olives

Spray large nonstick skillet with nonstick spray and set over medium high heat. Add chicken and cook until lightly browned, about 3 minutes per side.
Add broth, tomatoes, onion, and olives; bring to boil. Reduce heat and simmer, uncovered until vegetables are tender and chicken is cooked through, about 6 minutes.
