Chicken Mole Soft Tacos



This is another Weight Watchers recipe from one of the books my awesome mother in law bought me! For whom it may concern, it's 9 points plus for 2 tacos w/ 1/3 cup chicken in each. This recipe does not taste healthy at all, in that I mean, it's really tastey and awesome! It a different take on the mole recipes and I love it! It is definatly not super spicy but if you like that then add some extra chili powder.

Chicken Mole Soft Tacos

1 tsp canola oil
1 large onion, chopped
2 garlic cloves, minced
1 Tblsp unsweetened cocoa powder
1 tsp chili powder
1 tsp ground cumin
½ tsp cinnamon
½ tsp sugar
½ tsp dried oregano
½ tsp salt
1 (14 1/2oz) can no salt added diced tomatoes
1 (14 ½ oz) can no salt added black beans, rinsed and drained
1 cup chopped cooked skinless chicken breast
8 (6-inch) whole wheat tortillas, warmed
2 cups shredded romaine lettuce
½ cup shredded reduced fat Monterey jack cheese

Heat oil in large skillet over medium heat. Add onion and garlic; cook, stirring frequently, until golden, about 7 minutes. Add cocoa, chili powder, cumin, cinnamon, sugar, oregano, and salt; cook, stirring constantly, until fragrant, about 1 minute.
Add tomatoes; bring to boil. Reduce heat and simmer, stirring occasionally, until slightly thickened, about 8 minutes. Stir in beans and chicken; return to simmer and cook about 3 minutes.
Lay tortillas on work surface and spoon about ½ cup of chicken mixture down middle of each tortilla; sprinkle chicken evenly with lettuce and cheese. Fold tortillas in half and serve. EnJOY!
