I decided to make my amazing mother the richest chocolate cake I could find for her birthday (she turned 21 of course). It turned out to be a hit so I thought I'd share! I found this in a magazine from Kraft Foods.
Chocolate FudgeCake with Ganache
1 pkge (8 squares) semi sweet baking chocolate, divided
1 pkge chocolate cake mix
1 pkge (4 serving) chocolate instant pudding
4 eggs
1 cup sour cream
1/2 cup oil
1/2 cup water
1 tub (8oz) frozen cool whip
Preheat oven 350. Grease two 9" round baking pans. Chop 2 of the chocolate baking squares, set aside. Beat cake mix, dry pudding mix, eggs, sour cream, oil and water in large bowl with medium speed 2 minutes. Stire in chopped chocolate. Spoon into prepared pans.
Bake 30-35 minutes or until toothpick comes out clean in center. Cool pans on wire racks 10 minutes. Loosen cakes from sides of pans, invert onto racks, gently remove pans. Cool completely.
Place frozen whipped topping and remaining 6 chocolate squares in bowl and microwave on high for 1 1/2 minutes or until chocolate is completely melted and mix is smooth, stiring after 1 minute. Let stand 15-20 minutes until thickened and cool. Place 1 cake layer on serving plate; top with 1/4 of chocolate mixture and the second cake layer on top. spread top and side with remaining chocolate mixture. Garnish with almonds or nuts or even slice a strawberry ontop. Store in Fridge.
