Kilbasa and Carmelized Onions on Grilled Flat Bread
This is one of my favs that my hubby makes! He cooks the Kilbasa on the grill and preps the onions at the same time. He does make the flat bread a day or two ahead of time and uses wheat flour instead for a healthy twist. Then serves the veggies and sliced meat inside! so good! you can also just use pita bread or tortillas as a quick replacement.

Kilbasa:Grill on medium high heat aproximately 10 minutes until skin splits and you see clear juices come out. I like it nice and dark on the outside.
Brush with your favorite BBQ sauce.
Carmelized Onions:
1 onion
1 red bell pepper
1 Tblsp brown sugar
1 Tblsp Worshcester sauce
1 Tblsp BBQ sauce
Slice veggies and bring to a simmer in skillet on stove top. Add all ingredients together and let simmer about 10 minutes until veggies are soft.
Grilled Flatbread:
1 package active dry yeast
1 tsp sugar
1 1/4 cup warm water
4 cups flour
3 Tblsp olive oil
2 tsp salt
In large bowl, combine yeast, sugar, and 1/4 cup warm water; stire to dissolve. Let stand until foamy, about 5 minues.
With wooden spoon, stir in 1 1/2 cup flour, 2 Tblsp olive oil, salt, and remaining 1 cup warm water until combined. Gradually stir in 2 cups flour. With floured hand, knead mixture in bowl to combine.
Turn dough onto lightly floured surface and knead until smooth and elastic, about 10 minutes, working in more flour, about 1/2 cup, if necessary, to keep dough from sticking. Shape dough into ball and place in greased large bowl, turning dough to grease top. cover bowl with plastic wrap and let rise in warm place until doubled in volume, about 1 hr.
punch down dough. Turn onto lightly floured surface, cover and let rest 15 minutes.
Grease two large cookie sheets. Shape dough into 4 balls. On lightly floured surface, with floured rolling pin, roll 1 ball at a time into a 12-inch round about 1/8inch thick. Place rounds on prepared cookie sheets; lightly brush tops with some remaining oil.
Prepare outdoor grill for direct grilling over medium heat.
Place 1 round at a time, greased side down, on hot grill rack over medium heat and grill until grill marks appear on underside of dough and dough stiffens, 2-3 minutes. Brush top with some remaining oil. With tongs, turn rounds over and grill until marks appear on underside and bread is cooked through, about 2-3 minutes longer. Transfer flatbfread to tray, keep warm. Repeat with remaining dough.
- YOu can also bake the flat bread in the oven at 350 for approx 10 minutes or until cooked through.
