Lemony zucchini and basil quinoa with chicken


This recipe is one of my favs from my fav cookbook mom-a-licious! I love quinoa now, super good for you but tastes like heaven and there are endless creations you can make with it! Make it as a side dish by taking out the chicken and serving it with a protein, or throw in some chicken and its a main dish.
Lemony zucchini and basil Quinoa and chicken
2 Tblsp extra virgin olive oil
1 medium yellow onion, chopped
3 garlic cloves, minced
2 c quinoa, dry toasted and rinsed
4 c chicken broth
2 chicken breasts, cut into 1 inch pieces
salt and pepper
2 zucchini, cut into ¼ inch pieces
c basil leaves, torn
2 lemons, juiced
¼ c parmesan cheese
½ c slivered raw almonds

To toast the quinoa, place it in your pan and turn heat onto medium heat for 3 minutes, then pour into a small sifter/colander and rinse. Set aside. Saute the onions and garlic in extra virgin olive oil in a medium size pot. Add quinoa, broth, chicken and a pinch of salt and pepper.
Bring to boil, cover and reduce heat to low.
After 15 minutes stir in zucchini, lemon juice almonds and ¾ of the basil.
Turn heat off and replace lid for two minutes.
Finish with the remaining basil and parmesan. Add salt and pepper to taste.
