Chocolate Overload Bars
This recipe is a cross between chocolate bars and chocolate cheesecake. Super easy to make and really chocolatey goodness!
Chocolate Overload Bars
Crust:
1 ½ c flour
¼ c cocoa powder
¾ c sugar
¾ cup softened butter (1 ½ sticks)
Mix all dry ingredients together and then cut in the softened butter. (you can also do this with a food processor using chilled butter that’s been cut into chunks.)
Spread the mixture out in bottom of greased 9x13 inch pan and press down evenly.
Bake at 350 for 15 minutes.
For the filling:
2 8oz packs of cream cheese, softened
1 c mayo
1 c sugar
4 eggs
2 c melted chocolate chips
2 tsp vanilla extract
In an electric mixer, beat the softened cream cheese and the mayo together until its smooth. Gradually add the sugar. Add eggs one at a time, beating after each addition. Melt the chocolate chips in microwave for 1-2 minutes until just melted. Let cool for one minute and add gradually to mixture, mixing thoroughly. Then mix in the vanilla. Pour the finished mix on top of the curst you just baked.
Bake at 350 for 35 minutes. Let cool to room temp and then chill for at least 4 hrs.
Cut into brownie size bars. Garnish with strawberries, whipped cream, or powdered sugar if desired. EnJOY!
