Chocolate Peanut Butter Pie
MMMMMmmm, but you must love peanut butter to enjoy this one... so rich! You could even put a fudge layer on the crust before you add the peanut butter mixture. A recipe from my fav restraunt in bakersfield, The Guild House.
Chocolate Peanut Butter Pie
1 ½ c chocolate cookie crumbs
½ c butter, melted
12 oz cream cheese, softened
1 ½ c peanut butter, softened
1 ½ c sugar
1 c whipping cream, whipped (whip in mixer until soft peaks form. I added powdered sugar to sweeten.)
topping:
½ c sugar
½ c whipping cream (not whipped)
2 oz unsweetened chocolate
¼ c butter
½ tsp vanilla extract
Blend cookie crumbs and melted butter and press into bottom of 9inch spring form pan. Mix the cream cheese, peanut butter and sugar together in large bowl until well blended. Fold in the whipped cream gently. Spoon the filling into the crust. Combine the sugar and whipping cream in a saucepan and bring to a boil. Reduce heat and simmer without stirring for 6 minutes. Remove from heat, add the chocolate and butter and stir until melted. Stir in vanilla. Carefully pour the topping over the pie and refrigerate.
