Cliff's Chili


I am picky about chili and was so impressed by my hubbies chili creation. He added a can of kidney and black beans to thicken it up and make it go farther for a crowd. Super hardy and amazing!
Cliff's Chili

Ingredients
• 2 tablespoons olive oil
• 1 Large Trip Tip (1/4 inch cubes)
• 1 Med Pork Loin or Spare Rib (1/4 Inch cubes)
• 1 (14-ounce) can beef broth (recommended: Swanson's)
• 1 (8-ounce) can tomato sauce (recommended: Hunt's)
• 1 Large yellow Onion (Minced)
• 1 Large Red Bell Pepper (Minced)
• 1 tablespoon onion powder
• 2 tablespoons garlic powder
• 1 teaspoon Smoked Paprika powder
• 1/2 teaspoon salt
• 1/2 teaspoon ground black pepper
• 1 beef bouillon cube
• 5 tablespoons red chili powder
• 1 1/2 teaspoon cayenne pepper
• 3 teaspoons ground cumin
• 1 teaspoon brown sugar
• 2 teaspoons chili powder
Directions:

In a large heavy bottom pot, heat olive oil over medium-high heat. Add the meat, Season with salt and pepper and cook until browned, about 8 minutes. Drain off the excess grease. Fold in Onions and Pepper and let cook for another 5 Mins. Add the tomato sauce, the beef broth and spices and simmer for 1 hour. Let cool and store in an airtight container in the refrigerator.
