Mexican Casserole


My awesome friend Linzi Dell made this recipe for me during college days. Its cheap to make and makes a ton and sooooo delish! Thanks Linzi!

Mexican Casserole
1 lb cooked ground beef or turkey, drained
1 green bell pepper, chopped
1 can whole kernel corn
1 can chili, preferably Nalley
1 small can tomato sauce
1 small onion, chopped
1 cup cooked white rice
1 can olives, sliced and drained
1 packet taco seasoning
½ cup ketchup


Brown hamburger meat and onion together in large pot. Drain off grease. Add bell pepper, rice, olives, chili, corn, taco seasoning, tomato sauce and ketchup. Stir until combined. Simmer mixture together for 15 minutes. Serve over corn chips with salsa, sour cream and cheese. EnJOY!
