Milk Chocolate Florentine Cookies




I found this recipe from a holiday Nestle book! I love these cookies! They are easy to make and totally different from any cookies I already make. They are supposed to be very thin so dont worry when they come out lacy.
Milk Chocolate Florentine Cookies

2/3 cup butter, melted
2 cup quick oats
1 cup granulated sugar
2/3 cup flour
¼ cup light or dark corn syrup
¼ cup milk
1 tsp vanilla extract
¼ tsp salt
1 ¾ cup (11.5oz pckge) milk chocolate chips

Preheat oven to 375. Line baking sheets with foil, I like to use silicone mats.
Melt butter in microwave and stir in oats, sugar, flour, corn syrup, milk, vanilla and salt; mix well. Drop by level teaspoons, do not add too much or you will have a gooey mess! Keep them about 3 inches apart, I only put 9 cookies on a sheet.
Bake for 6-8 minutes or until golden brown. Cool completely on baking sheets on wire racks. Peel foil from cookies carefully.
Microwave morsels in medium bowl uncovered about 1 minute; stir. Microwave another 10-15 seconds if necessary. Spread thin layer of melted chocolate onto flat side of half of the cookies. Top with remaining cookies.
