Yucatan Chicken

This recipe was made by my amazing friend and cook/baker, Julie Funk! She has given me so many amazing recipes along the years and Im so excited to share them all with you! Thanks Julie! This recipe is PACKED with flavor and so quick and easy to make!
Yucatan Chicken

2 chicken breasts, cut into bite size pieces
2 Tblsp lime juice
1 Tblsp spicy seasoning***
16oz can stewed tomatoes, Mexican style
2 Tblsp sugar
1 ½ tsp cornstarch
1 small can green chili peppers, diced and drained
1 clove garlic, minced or ¼ tsp garlic powder
1 Tblsp olive oil

Heat skillet and 1 Tblsp olive oil. Cook chicken with lime juice and spicy seasoning* until no longer pink.
Add tomatoes, chili’s, sugar, cornstarch and garlic and cook with chicken, uncovered about 4-5 minutes. Serve with rice, cheese, lettuce, sour cream, olives and tortillas.

***Spicy seasoning: ½ tsp corn meal, ½ tsp paprika, ¼ tsp salt, 11/4 tsp garlic powder, ¼ tsp cumin, ¼ tsp dried oregano, crushed, ¼ tsp ground red pepper.
