Pulled Pork with Root Beer Sauce















This recipe is from Julie and Maryanne Mulkay, soooo easy to make and I love how it makes my house smell! mmmm, so good!
Pulled Pork with Root Beer Sauce

1 boneless pork loin roast (3 lbs)
2 tsp salt
1/2 tsp pepper
1 medium onion, chopped
2 cans (12oz each) root beer (3 cups)
1 bottle (12oz) chili sauce (like the kind in the heinz bottle)
1/2 tsp salt
12 sandwich buns

in a 3-4 quart slow cooker/crockpot, place pork roast, 2 tsp salt, pepper, onion and 1 cup of the root beer. Cover; cook on low for 7-8 hours.
About 30 minutes before serving, in a 4quart sauce pan or dutch oven, heat remaining 2 cups of root beer, chili sauce and 1/2 tsp salt to boiling over medium high heat. Reduce heat to medium. Cook 8-10 minutes, stirring occasionally until mixture is glossy and reduced to 2 1/2 to 3 cups.
Remove pork from slow cooker, discarding cooking liquid. Shred pork, using 2 forks to pull pork apart. Stir in chili sauce mixture. To serve, spoon about 1/2 cup pork mixture in each bun. EnJOY!
