Chicken and Cheese Enchilada's


Im not sure where I got this recipe but it's my favorite, one of my friends in college years gave it to me so thank you whichever amazing friend it was! Anywho, so it's not authentic mexican cuisine but its amazing and easy to make. So cheesy and good!
Chicken and Cheese Enchilada's

2-3 cups shredded cooked chicken breast
10-12 tortillas, or more if using corn tortillas (my fav)
2 cups grated cheddar cheese
1 cup sour cream
3/4 cup salsa
1 can cream of chicken soup

In a medium sauce pan, melt the cheese, sour cream, salsa and soup until well blended. In each tortilla, put about 3 Tblsp cheese mixture and a small handful of the chicken. Roll and place seam side down in a 9x13 pan. Bake at 350 for 30 minutes and EnJOY!
