Albondigas


Tonight we had a family home evening night and once a month we have a "cultural night" implemented into it. Tonight's was Mexico and thanks to my amazing friend Julie Mulkay, she provided us with the perfect Mexican dish, meat ball soup! Sooo flavorful! I love this soup! Thanks Julie :)

Meatball ingredients:

1lb ground beef
1 egg
1 clove garlic
¼ cup uncooked rice
Oregano, salt and pepper to taste
2 hard boiled eggs, cut into chunks

Soup:1 can diced tomatoes (flavor onion and bell pepper)
1 cube of Knorr chicken bullion
1 cup sliced carrots
1 bell pepper cut into chunks, or diced
1 small onion, diced
1 clove garlic, diced
Oregano, salt and pepper to taste
Water ½ full in large pot

Start boiling 2 eggs in a small pot. Set aside.
In a large pot, add all the soup ingredients to the water and boil. Test the broth for taste, add more seasonings if needed.
Mix the meatball ingredients and wrap the meat mix around a chunk of hard boiled egg. As soon as the soup starts boiling, drop the meatballs in.
Let soup and meatballs boil 20-40 minutes or until rice in the meatballs is cooked. Check doneness by taking out a meatball, cut in half and test rice inside.
Eat with tortillas. EnJOY!
