Chicken and Waffle Bites

What is better than chicken and waffles? How about bit sized chicken and waffles! Yes! Don't forget the hot sauce and syrup!

Chicken and Waffle Bites

1-2 packages of frozen popcorn chicken bites
1-2 boxes mini waffles
hot sauce
maple syrup

Preheat your oven and bake your popcorn chicken on a sheet pan according to package directions. Then using a toaster, toast the mini waffles until golden and cool. Then assemble your waffle bites by placing each waffle on a serving plate, top with chicken and poke a tooth pick through it to make it easier to pick up. Have hot sauce and maple syrup on the side for people to drizzle on their waffle bites. EnJOY!

Pancake Bites

Here is a super quick and easy breakfast idea! So many different ways to change these up too!

Pancake Bites

Instant pancake mix plus ingredients to make the mix.
Cooked sausage cut into bite sized pieces, or blueberries, strawberries, bacon, anything you want in your pancake bites.

Mix your instant pancake mix with ingredients box calls for. Mix in your sausage or desired filling. Using a mini or regualr sized cupcake pan, lightly spray the pan and fill 3/4 full of batter. Bake 350 for 12-15 minutes.
Top with maple syrup, fruit syrup, powdered sugar, whatever you want! EnJOY!

Vegan Banana Muffins

I have been cooking and baking more plant based foods this last month and had to share this recipe from Forks Over Knives. These are so healthy, so super easy to make and so good! I added frozen blueberries to mine so the baking time was longer. Also I found that tin muffin liners worked better to get the muffins out of.

Just Bananas Muffins

4 very ripe bananas
2 cups oats, ground into flour
1/2 cup unsweetened apple juice
1/2 cup unsweetened applesauce
2 Tblsp ground flaxseeds
1 tsp ground cinnamon
1/2 Tblsp alcohol free vanilla extract
1/2 Tblsp apple cider vinegar
1/2 Tblsp aluminum free baking powder
1/2 tsp baking soda

Preheat oven at 350. Line a muffin pan with 12 cupcake liners. Grind oats into a flour with food processor. Place in a large bowl and add all the other dry ingredients. Puree bananas in a food processor until smooth.
Add the apple juice, applesauce, vanilla extract and apple cider vinegar and process again until combined. Pour over dry ingredients and mix until just combined. Do not over mix. Pour into TIN muffin liners filling about 2/3 full.
Bake for 20-22 minutes until tops are golden brown and toothpick comes out clean when inserted into the middle, Let cool. EnJOY!

French Toast Roll-ups

Since we had a day off of school and work last week I decided to make something fun and special for breakfast for my kids. So naughty and so good! I came across this recipe on the-girl-who-ate-everything.com    I used wheat bread but I would definitely recommend white bread. Its much more moist and easier to roll up.

French Toast Roll-ups

8 slices white sandwich bread
Nutella or softened cream cheese
Diced strawberries
2 eggs
3 Tblsp milk
1/3 cup sugar
1 heaping tsp ground cinnamon
butter, for greasing the pan

Cut the crust from each slice of bread and flatten it out with a rolling pin.
Place about 1-2 tsp of your chosen filling 1 inch from one end of the bread in a strip. Roll the bread up tightly and repeat with the remaining pieces of bread. I really like Nutella with diced strawberries or you can do cream cheese with strawberries. In a shallow bowl, whisk the eggs and milk until well combined.
In a separate shallow bowl mix the sugar with the cinnamon.
Heat the skillet medium high and melt a Tblsp of butter. Dip each bread roll in the egg mixture coating well and then place them in the pan seam side down. Cook in batches until golden brown, turning them to cook and brown on all sides, about 2 minutes per side. Add butter to the pan as needed.
Add cooked rolls immediately from the pan to the cinnamon sugar and roll until completely covered in sugar. You can serve with syrup for dipping if desired. EnJOY!

Pumpkin Pie Croissants

One of the teachers at my children's school made these with her class a few weeks ago. They were so good that I of course had to go straight home and make them! Such a fun and easy pumpkin treat! This recipe is from justapinch.com

Pumpkin Pie Croissants

2 tubes of refrigerated crescent rolls
4 oz of cream cheese (1/2 a block)
1 cup canned pumpkin puree
1 1/2 tsp pumpkin pie spice
3 Tblsp sugar

Roll each crescent out and separate. Mix together the pumpkin pie filling with the cream cheese, spices and sugar. Beat together until fluffy and creamy. Spread 1 Tblsp or more of the filling along the crescent roll and roll it up.
Mix together 4 Tblsp of sugar and 1 Tblsp pumpkin pie spice; roll each pumpkin pie croissant in it. Bake at 375 for about 15 minutes. EnJOY!

Easy Nutella Cinnamon Rolls

These are the yummiest and easiest cinnamon rolls ever! I tried making them in both a mini muffin tin and a regular size muffin tin and both work great! I found this recipe on buzzfeed.com

Easy Nutella Cinnamon Rolls

1 tube refrigerated crescent dough
1 small jar nutella
Cinnamon

For the Frosting:
1 1/2 cups Powdered sugar
1/2 cup butter
1/2 cup cream cheese
1/2 tsp vanilla extract

Preheat oven to 350 degrees.
Unroll a tube of crescent dough onto a lightly floured surface and lightly press together to seal.
Spread an even layer of nutella and a dash of cinnamon, then roll it back up.
Cut the dough into eight pieces with a sharp knife. Place each piece into a greased muffin tin and bake until golden brown. Cool slightly.
For your frosting, mix softened butter and cream cheese with an electric mixer until fully combined and smooth. Sift in powdered sugar, mixing after every 1/4 cup or so, then add the vanilla extract and stir until everything is smooth. Spread evenly onto slightly cooled rolls. EnJOY!

Baked Eggs and Ham

Such an easy breakfast!!!! So many ways you can change this recipe up! I do mine basic, just egg and ham, but you could add veggies, herbs, whatever you want! I found this recipe o ohsnapletseat.com

Baked Eggs and Ham

Eggs
Ham (I use a good quality, but you can just use a basic deli sliced ham)
Optional toppings/fillings: cheese, spinach, green onions, sausage, kale, a touch of milk or cream, salt and pepper.

Lightly grease your muffin tins with pam spray. Place 1 or 2 slices of ham inside (I use 2), crack an egg and pop it on top of the ham. You can also do a more scrambled version and crack your eggs into a bowl, add a splash of milk, salt and pepper, whisk, then pour onto ham cups.
Bake at 400 degrees for about 15 minutes. EnJOY!

Whole Wheat Pancakes with Honey Sweetened Strawberry Syrup

1 1/2 cups whole wheat flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 1/2 cup silk milk, almond, cashew, any you like
1 1/2 Tbsp fresh lemon juice (zest lemon first for the syrup)
2 large eggs
1 Tblsp honey
3 Tblsp coconut oil, melted
whipped coconut cream or whipped cream, for serving (optional)

Strawberry Syrup:

1 lb strawberries, diced (3 1/3 cups diced)
1 tsp lemon zest
1/3 cup honey
2 Tblsp water
1 1/2 tsp cornstarch

For the syrup: bring honey, strawberries and lemon zest to a boil in a medium saucepan set over medium-high heat, stirring frequently. Reduce heat slightly and allow to boil about 5 minutes until berries are softened and juices are well extracted.
In a small bowl, whisk together water and cornstarch until smooth then pour into berry mixture. Allow to boil until thickened about 1 minute. Remove from heat and cool slightly.

For the pancakes: Preheat a non stick electric griddle to 375 degrees. In a mixing bowl whisk together wheat flour, baking powder, baking soda and salt for 20 seconds.
In a separate mixing bowl whisk together silk milk and lemon juice then mix in eggs and honey. While whisking stir in coconut oil.
While whisking, slowly pour silk milk mixture into whole wheat flour mixture. Stir just until combined. Spray griddle with non stick cooking spray then pour about 1/3 cup batter onto griddle at a time. Cook until bubbles begin to appear on top surface and bottom is golden brown, then carefully lift and flip to opposite side and cook until bottom is golden brown.
Serve warm with strawberry syrup and optional whipped coconut cream or whipped cream. EnJOY!

Birthday Cake Pancakes

Ki requested a special birthday breakfast for his special day a few months ago, so he got these ultra "healthy" (not) pancakes! A big win! So fluffy and super sweet! I found this recipe on tasteoflizzyt.com

Birthday Cake Pancakes

1 box funfetti cake mix (or any yellow cake mix with sprinkles added)
1 1/3 cup white flour
2 tsp baking powder
2 Tblsp sugar
1/2 tsp salt
1/3 cup canola oil
3 eggs
2 1/3 cups milk
1/3 cup sprinkles

Frosting:
1 cup powdered sugar
2 Tblsp butter, softened
2 Tblsp half and half cream (I used milk)
1/2 tsp vanilla extract

In a large bowl, combine the flour, baking powder, sugar, salt and cake mix. Set aside. In another small bowl, mix together the oil, eggs, and milk. Add the wet ingredients into the dry ingredients and mix just until combined. Fold in the sprinkles. Batter will be thick. Add a little more milk if its too thick.
Heat a griddle to about 275 degrees. Spray the griddle with cooking spray. Ladle the pancake batter onto the hot pan and cook the pancakes for about 2 minutes on each side.
In a small bowl, stir together the powdered sugar, softened butter, cream and vanilla. This frosting will be at a spreadable consistency. If you want to drizzle it, microwave the frosting for about 10 seconds and stir, then drizzle over the pancakes. Double the frosting recipe if desired. EnJOY!

Bunny Butt Pancakes

I saw this adorable bunny butt idea floating around on facebook and I had to make them for my kiddos for Easter. So easy!

Bunny Butt Pancakes

Pancake mix (I used Krusteez) + ingredients to make mix
Whipped cream (I used the kind in the can)
Shredded coconut
mini chocolate chips/ or melted chocolate in a ziplock bag and cut off corner to pipe onto feet
1 banana
Syrup

Mix your pancake mix, enough for about 10 pancakes. Make 4 larger sized pancakes (for the butt), make 4 medium sized pancakes (for the head), make feet oval shaped, make ears smaller than feet, oval shaped. To assemble, put ears at the top of the plate first, top with medium sized pancake, top with large pancake, and place feet at the bottom. Put one slice of banana on each foot, place 3 mini chocolate chips for the toenails, then dallop a small mound of whipped cream for the tail and top with a little coconut. Serve with syrup if desired. EnJOY!

Nutella and Peanut Butter Crescents

I saw a recipe on pinterest using nutella and peanut butter baked into cresent rolls, and yes I stopped what I was doing to make these bad boys! Oh these are so dangerous! I also made a batch of peanut butter and jelly cresent rolls for my kids lunch. I was their favorite that day.

Nutella and Peanut Butter Crescents:

Nutella
Peanut butter (I used creamy)
1 can of refrigerated Pillsbury crescent rolls

Preheat oven to 350. Unroll crescents. Place one tablespoon of nutella and one tablespoon of peanut butter into the center of the crescent. Roll the dough from the large side up. Place on greased baking sheet and bake for 8-12 minutes or until lightly golden. You can also do the same recipe using peanut butter and jelly for a fun kids snack. EnJOY!

Chocolate Cresents

I found this recipe on sallysbakingaddiction.com and couldnt believe Ive never tried this before! Brilliant! Stay tuned for more stuffed cresent recipes! There are endless possibilities with what you can do with these!

Chocolate Cresents

1 Pillsbury cresent dough, refrigerated can
2 cups chocolate chips, for filling and for drizzling

Ok here goes the complicated instructions: unroll, fill, roll up, bake. Too easy! You can also put mini mallows in the filling too for extra goodness. Bake at 375 for 10-15 minutes. Let cool a minute or two. Melt remaining chocolate chips and drizzle on top! EnJOY!

Stuffed Breakfast Biscuits

I found this recipe on richestoragsbydori.blogspot.com and had to make it for a group of girlfriends a few weeks ago. So yummy! You can just eat it as is or top it with some gravy. You can type in biscuits and gravy, or just gravy in the upper left hand of my blog and it will pull up my favorite gravy recipe.

Stuffed Breakfast Biscuits

2 regular sized refrigerated pillsbury biscuits in a can, or 4 small cans
1 package bacon, cooked until crispy
3-4 cups shredded cheddar cheese
6 scrambled eggs
Optional: 3-4 cups shredded hash browns, cooked. Gravy recipe (Look up biscuits and gravy on my blog to find my fav recipe)

Cook your bacon until crisp. I like to use scissors and cut my bacon in small bits to cook, it cooks faster and then you dont have to crumble it later. Drain on paper towel once cooked. Scramble eggs with a little salt and pepper. Cook your shredded hash browns and set aside.
Open can of biscuits, stretch them out and flatten to make them bigger. Put a little egg, hashbrown, bacon bits and cheese on top of the flattened biscuit. Pull the sides of the dough together and pinch them together to seal. Place them sealed side down. Bake at 425 for 8-10 minutes or until golden brown. Optional, smother with gravy! EnJOY!

Bacon Pancake Dippers

After a rough weekend, I wanted to treat my kids to a fun breakfast. I mean, bacon, pancakes, and syrup? Yep, that's a fun way to start the day! Of course mine didnt come out nearly as pretty as they looked on pinterest but its all about the taste right?

Bacon Pancake Dippers

1 Batch of bisquick pancakes + ingredients the box calls for, milk eggs, etc.
12 slices bacon, cooked crispy
Maple Syrup for dipping

Preheat your griddle or pan and spray with cooking spray.
Mix your pancake batter according to directions. You want your batter on the thicker side, not super runny like mine was. Pour a long strip of batter on griddle and press a slice of your cooked and crsipy bacon on top. Carefully drizzle a little more pancake mix ontop of bacon. Once the pancake bubbles, its ready to turn. Flip your pancake over and cook another minute or two until golden.
Serve pancakes with a small side of syrup. EnJOY!

Cinnamon Roll Waffles

Pinterest can be dangerous! This recipe is why! So easy to make and such a fun treat!

Cinnamon Roll Waffles

1 can refrigerated cinnamon rolls (I used pillsbury brand)

Preheat your waffle iron. When ready to cook, spray a little cooking spray on the iron and place 3 cinnamon rolls on the iron, one on each side and one in between. I also put half of a roll on each side as well to make them full waffles. Cook until golden brown but be careful to not overcook. Smear on or drizzle on some of the frosting that comes in the can with the cinnamon rolls and EnJOY!

Nutella Mini Pancake Kabobs

I saw these cuties on pinterest last week and couldn't wait to make them! They are super easy to make and so adorable! A dilish and light breakfast idea! Thank you www.tablespoon.com for the recipe idea!

1 lb fresh strawberries, washed, dried, stems removed, sliced into 1/2 inch thick slices
2-3 large firm bananas, peeled and sliced into 1/2 inch thick rounds
4 wooden skewers broken in half to make 8 small kabobs, if using for kids cut off the sharp ends

Prepare the pancake batter according to package directions and pour small dabs of batter onto a hot, lightly greased griddle for 1 1/2 inch diameter pancakes, about 3/4 Tblsp of batter per mini pancake.
Cook the mini pancakes for about 1-2 minutes on each side or until lightly browned. Spread some nutella on each of the pancake bites and layer the ingredients onto the kabob sticks. Serve immediately so the banana does not brown. EnJOY!

Umple MIke's Breakfast Casserole

This recipe is from the awesome Mike Faussett. Way back in the day, he made this for all of us in the choir that he was conducting. Mike makes this seasoning called "Umple Mikes all purpose seasoning" and it is truly amazing on everything! You can find it on ebay.com under Umple Mike's Seasoning.

Umple Mike's Breakfast Casserole

18 Large to XL Eggs
6 Cups Frozen Shredded Hash Browns
1 lb Bacon
3 Cups Shredded Chedder Jack Cheese
1 7oz. can Diced Chilies
1 7oz. can Diced Jalapenos
Umple Mikes All Purpose Seasoning

Fry Bacon until slightly crisp, drain, set aside. Discard all but 3 to 4 Tbsp of the bacon drippings. Season hash browns liberally with Umple Mikes, fry in drippings until golden brown. Line bottom of glass 13 x 9 casserole dish with hash browns (don't use metal as it will turn the eggs green and nobody likes green eggs without ham). Beat eggs together with diced chilies and jalapenos (skip the jalapenos if you want but I like them). Soft scramble eggs until slightly wet. Place in casserole dish over hash browns, spread evenly. Spread cheese evenly over eggs. Top with bacon. Back at 350F for 20 minutes and serve. EnJOY!

Juevos Rancheros

I had this recipe at a local breakfast spot recently and had to recreate it! The beans make it creamy and perfect. I used a local product a friend makes called "Tomato Smash" that is sweet and relishy, mmmm. You can buy it at Andy's in Sebastopol or online as well at www.tomatosmash.com.

Juevos Rancheros

1 egg
2 corn tortillas
2-3 Tblsp refried beans
2-3 Tblsp salsa
salt and pepper

Warm both tortillas, put one on the plate and top with warmed beans. Top with remaining tortilla. Top tortilla with cooked egg, I like it over medium but you can cook it to however your preferance. Top with salt and pepper and a little salsa or Tomato Smash product. EnJOY!
