Meat Loaf with Piquant Sauce and Ranch Potatoes
I have two amazing friends, Julie Funk and Becci Anderson who make the best Meat Loaf's ever! So I combined my favorite qualities of their recipes and added some ranch potatoes to go along! If your a meat loaf fan you have to try this one!
Meat Loaf with Piquant Sauce and Ranch Mashed Potatoes
Meat loaf:
1 cup bread crumbs, or cracker crumbs or oatmeal.
2 lbs lean ground beef
3 beaten eggs
2 Tblsp Worcestershire sauce
1 small onion, finely chopped
2 tsp salt
1 tsp pepper
2 cups shredded cheddar cheese
Mix well. Grease 2 loaf pans or muffin tins and fill with meat mixture. Spread sauce ontop. Bake for 45 minutes at 350 in loaf pan, or 25 minutes in the muffin tins. Or you can make "meat loaf cupcakes" by baking your meatloaf in a muffin pan and piping your mashed potatoes on top for a fun look.
Piquant Sauce:
Combine 6 Tblsp. Brown sugar
½ cup catsup
½ tsp ground nutmeg
2 tsp dry mustard.
Ranch Mashed Potatoes
4 Large Potatoes
½ cube of cream cheese
1 packet dry ranch dressing
½ cube butter, or more if needed
1 cup shredded cheddar cheese
Peel and cube potatoes. Boil in water until tender, about 10 minutes. Drain water and put boiled potatoes into electric mixer. Add butter, cream cheese, cheese and ranch mix. Mix until desired smoothness.
