Banana Whoopie Pies
This is a recipe from a martha stewart magazine that looked so yummy, and it is! I altered it a bit, I like a sweet filling so this has 4 cups of confectioners sugar instead of 1 cup. I love banana desserts and this was just the perfect amount of banana-ie-ness! I am on a whoopie pie kick and love this variation!
Banana Whoopie Pies
2 cups flour
½ tsp baking powder
½ tsp baking soda
½ tsp salt
½ cup mashed banana (1 large ripe banana)
½ cup sour cream
½ cup unsalted butter, softened
½ cup sugar
½ cup packed light brown sugar
1 large egg
1 tsp pure vanilla extract
16oz cream cheese, softened
4 cups confectioners sugar, plus more for dusting
Preheat oven to 350. Whisk together flour, baking powder, baking soda and salt in a bowl. In a separate bowl, mix together banana and sour cream. In a large bowl beat butter and both sugars with an electric mixer on med-high speed until fluffy, 3-4 minutes. Add egg and ½ tsp vanilla, beating until incorporated. Add banana mixture in 2 additions, alternating with flour mixture.
Transfer batter to a pastry bag fitted with a ½ inch plain tip. Pipe batter into 1 ¼ inch rounds on parchment lined baking sheets, spacing 1 ½ inches apart. Or, just spoon it onto cookie sheet.
Bake until edges are golden, about 12 minutes. Transfer to wire rack and let cool completely.
To make filling, beat cream cheese, confectioners sugar and remaining ½ tsp vanilla with an electric mixer on medium speed until smooth, about 2 minutes. Pipe or spoon about 1 Tblsp cream cheese mixture into flat sides of half the cookies. Sandwich with remaining cookies. Dust with confectioners sugar. Store in refrigerator until ready to serve. EnJOY!
