Ham, Potato and Cheese Casserole

My friend Julie Funk shared this recipe for me and it was one of my favorites the first time she made it for me! It is a great main dish recipe, then leftovers for breakfast in a tortilla! Yum!
Ham, Potato and Cheese Casserole
3lbs-10 medium potatoes
½ Cup plus 2 Tblsp butter
½ Cup plus 2 Tblsp flour
5 Cups milk
3 Cup chopped pre-cooked ham
2 Cup cheddar cheese or more
1 tsp garlic powder
1 tsp salt and pepper, or to taste

Peel and cut potatoes into bite sizes. Boil potatoes approx. 15-20 minutes until just fork tender. Cut ham into bite size. Mix butter and flour in large pan over low heat stirring often. Add milk slowly. Cook until boils, stirring often. Add seasoning. In casserole dish, layer sauce, potato, ham then cheese. Layer twice. Bake 350 for approx. 40-50 minutes until cheese is golden and bubbly.
Serve as casserole main dish or as breakfast with tortillas.
