Lime Tart with Dulce De Leche and Strawberries





This one is an extra special recipe from my amazingly gifted and talented Chef friend, Molly DelMonte! Thanks boo! This is a tart but sweet amazing experience! I also omitted the Tequila and put more lime in its place.
Lime Tequila Tart with Dulce de Leche and Strawberries
Tart crust:
Use a Store bought pie crust/refrigerated. Let thaw at room temp according to package, or 10 minutes.
Spray a 9" or 11" tart pan with Pam/non stick spray.
*it is imperative to work the following part quickly as the success depends on how cold the dough stays and how little it is handled.

Roll dough so it is 1" larger in diameter than the tart pan ( use flour so dough doesn't stick to surface you're rolling it on)
Starting 1/4 of the way down of the rolled dough, loosely roll dough over rolling pin than drape onto tart pan.
Using your knuckle, gently press dough into corners of pan, scraping the top of the edges to create an even surface.
Dock the dough with a fork to prevent rising while baking.
Place a parchment circle (or foil) cut 1" larger in diameter and place on top of dough.
Cover the surface in dried beans
Refrigerate for at least an hour up to over night uncovered (you can cover and save for several days or freeze too).
Place tart in preheated 400 degree oven for 30- 40 min, rotating half way through.
Dough should be barely golden brown and just pulling away from edges of pan.
Cool.

Lime tequila curd
1/2 cup lime juice
1/4 cup gold tequila (not white) (Can omit)
1 can/ 14 oz sweetened condensed milk
1 T sugar
3 large egg yolks

Mix all ingredients until homogenized (I dont know what that means so I just mixed it for a minute or 2, hee hee).
Pour into baked tart shell still in pan
Bake at 350 degrees for 15 min, rotating half way through
Cool

Dulce de leche
1 can/ 14 oz sweetened condensed milk

Place unopened can in a pot of water
Make sure can is covered with water
Bring to boil then simmer for 3 hours, adding water to pot as necessary.
Remove can from water and let cool until you can touch it
Open can et viola! Dulce de leche!

Serve this with a little dulce de leche on the plate, a slice of tart, and sliced strawberries that I mixed with a little sugar. EnJOY!
